Acai berries are a purple superfruit that’s literally bursting with wholesome ingredients including antioxidants, amino acids, fibre, vitamin A, calcium, beta-sitosterol and monounsaturated fatty acids (including omega 3 and omega 6). Acai berries, which boast an extremely high ORAC score (Oxygen Radical Absorbance Capacity), higher even than blueberries, are generally freeze dried and sold in a handy powder form that can be readily mixed into drinks and desserts such as this Amazing Acai Berry and Chia Seed Pudding.
In addition to fragrant acai, this raw pudding also contains chia seeds, which are packed with vitamin A, minerals (including calcium, potassium, magnesium, zinc, phosphorus, manganese and sodium), protein, fibre, enzymes, carbohydrates and amino acids.
And, according to a 2008 report by the Los Angeles Times, Açai berry cultivation is not only sustainable, it also provides local farmers with a livelihood that doesn’t negatively impact the Amazon rainforest, which means that you get to enjoy this delicious and nutritious, yet easy to prepare pudding with a clear conscience!
2 tbsp. of chia seeds
1 tsp. of organic Acai powder
A handful of organic goji berries
1 cup of almond milk
Simply mix the almond milk, Acai powder and the chia seeds together in a bowl and then place in the refrigerator and leave overnight.
It is ready to serve when the texture has taken on a thicker consistency. When ready to serve top with a scattering of goji berries and blueberries for extra eye catching colour vibrancy (and of course extra delicious flavours!). Enjoy!
