Why You Should Make This Recipe
Almonds grow on the almond tree (Prunus dulcis), which is native to southern Europe, the Middle East, North Africa and Asia and, according to archaeological records, have been enjoyed since as long ago as 3000 BC. They are a routine ingredient in many skin care products and commonly used to prepare a variety of delicacies, including almond paste, marzipan, nougat, almond oil and almond milk - an excellent alternative to cow's milk that’s suitable for those who suffer from a lactose intolerance or wish to avoid dairy products.
Contrary to popular belief, almonds are not nuts but rather stone fruits, which boast a hard shell that’s similar to cherry, plum and olive stones. Available in both peeled and unpeeled varieties, organic almonds are rich in vegetable protein, fibre, vitamins (including A, B1, B2, B6, B11 and E), minerals (such as potassium, calcium, sodium, magnesium, selenium, iron, copper, zinc and phosphorus) and monounsaturated fatty acids.
Organic almonds can be enjoyed just as they are or mixed with other nuts and / or dried fruit to create a tempting trail mix. A decidedly crunchy topping for soups and salads, they also make a splendid addition to raw chocolate, cakes, desserts and other sweet treats, including our delicious raw almond bars below.

- 2 cups of organic almonds
- Half a cup of organic sunflower seeds
- Half a cup of raw whole almond butter
- 1 and a half tablespoons of desiccated coconut
- 1/2 cup of coconut oil
- 3 tbsp. of organic coconut nectar
- 1 and a half tablespoons of goji berries (chopped)
- 1 tablespoon of orange zest
To prepare the raw almond bars, first gently melt the coconut oil. Next, add the organic almonds, sunflower seeds, and almond butter to your blender and process for around 20 seconds. In a separate bowl, mix the melted coconut oil, coconut nectar, desiccated coconut, chopped goji berries and orange zest together. Now pour in the nut mixture into this bowl and stir and incorporate everything together thoroughly.
Pour this mixture into a tray lined with parchment paper and put into the freezer for at least 1 hour.
After 1 hour, cut into desired shapes and sizes.
When cut, if to be eaten later, store them in the fridge or freezer.
