Organic dried dates are laden with beneficial nutrients including fibre, natural fruit sugars, vitamins A, B and C and minerals such as iron, magnesium and phosphorous. They boast a naturally sweet and fruity flavour and make an exceptionally filling and nutritious snack between meals. Organic dried dates are also a tasty addition to breakfast cereals, trail mix, raw desserts, raw chocolate and other homemade raw snacks
For the base and topping
- 1 1/4 cups of desiccated coconut
- 1 cup of organic Brazil nuts
- 1/3 cup of organic macadamia nuts
For the filling
- 2 cups of organic dried dates
- 1 cup of organic dried figs
- 1 tsp. of organic vanilla bean powder
- 1 apple
- The zest of 1 organic orange
To prepare the base, first pre-soak the Brazil and macadamia nuts for a couple of hours to soften. Next add to your blender and process into small pieces. Add the remaining ingredients and blitz until it forms a lovely firm dough. Now press two thirds of this mixture into a cake tin and leave the rest for your topping.
To prepare the rich organic date filling, chop the organic dried dates and figs into small pieces and then pop into a mixing bowl. Add in the remaining ingredients, except for the apple and mix thoroughly. Now place half of this mixture into your blender. Cut up your apple into small pieces and add this to the blender and blend until smooth.
Transfer back into the mixing bowl and mix thoroughly into the remaining half of the fruit mixture. Next spread the date mixture onto your base and crumble over the topping mixture. Cover and place in the freezer overnight to set. Cut into generous slices before serving.
