Organic sunflower seeds are a delicious and nutritious superfood packed with beneficial nutrients such as fibre, protein, vitamins, minerals, polyunsaturated fatty acids and omega 3 and omega 6 fatty acids. They have been enjoyed for centuries by many different cultures including the Inca’s for whom the sunflower plant was a symbol of god. Perfect as a snack between meals that can be enjoyed straight from the bag, organic sunflower seeds also make a decidedly crunchy addition to a variety of rawfood recipes. Once peeled, try scattering liberally over breakfast cereals, soups and salads for example, or perhaps adding to your favourite rawfood desserts and raw chocolate for added bite.
For the truffles
- 1 cup of organic dried apricots
- 1 cup of organic sunflower seeds
- 1/2 cup of desiccated coconut
For the coating:
- 1/4 cup of sesame seeds
The best bit about these utterly irresistible truffles is that they can be rustled up in next to no time at all, leaving you more time to enjoy them!
Pop the dried organic apricots and dates, organic sunflower seeds, coconut, coconut oil and Himalayan pink salt into your blender and process into a firm, mixture.
Now shape the mixture into small balls using your hands. Lastly, roll the truffles once into sesame seeds and place in your fridge to chill (preferably for at least 30 minutes) and they’re good to go!
