This mouth-watering baobab and berry tart contains a generous serving of baobab, an incredibly versatile fruit extract that’s literally bursting with vitamins (A, B1, B2, B3, B6 and up to 10 times more vitamin C than oranges), minerals (including calcium, potassium, magnesium, iron, manganese, phosphorus, zinc and molybdenum) and fibre.

- 2 cups of fresh blueberries
- 1/3 cup of organic cashew nuts, pre-soaked 2-4h
- 2 tablespoons of coconut oil
- 2 tablespoons of coconut palm sugar
- 3 teaspoons of organic baobab powder
- 1 teaspoon of purple corn extract
- 1 cup of organic almonds
- 1/2 cup of dried organic dates
- 1-2 teaspoon lemon juice
Preparation
For the tart crust –
Add 1 cup of almonds and gently grind these up first in a food processor.
Add the dates to the almonds and then blitz. You want to a gooey type consistency that can hold its shape to come out from this.
With the mix, use a tart tin and gently press the mixture into the tin for your tart crust.
For the Baobab filling –
Soak the cashew nuts for 4 hours
Gently warm and melt your coconut oil
Then with your soaked cashew nuts and melted coconut oil put it into your blender. Add your other filling ingredients of blueberries, coconut palm sugar, baobab powder, purple corn extract, and lemon juice into the blender and blend until smooth
Finally take your baobab filling and pour into the tart crust. And finally decorate with blueberries to finish the dish.
