Cacao Nibs Tex Mex Tacos

Crunchy raw cacao nibs are a deliciously pure and unrefined treat made from crumbled raw cacao beans. Although they contain zero fattening sugars or dairy products and almost no caffeine, raw cacao nibs are literally loaded with valuable nutrients such as vitamins (particularly vitamin C), minerals (including iron, magnesium, chromium, zinc and copper), antioxidants, fibre and essential fatty acids.

Raw cacao nibs taste surprisingly good in savoury dishes too – our tempting Tex Mex tacos con cacao nibs recipe below is a fine example!

Cacao Nibs Tex Mex Tacos

Try cramming these spicy raw tacos with your choice of non-fried beans, marinated vegetables and home made guacamole for an exceptionally satisfying lunch.

*This recipe does require a dehydrator.

-  2 fresh cobs of corn

- 1 tbsp. of organic cacao nibs

- 1/2 a cup of organic flax seeds

- 1/2 a cup of organic sunflower seeds

- 1/4 of a ripe avocado

- 4 spring onions

- 2 cloves of garlic

- 1 tsp. of cumin powder

- 1/2 tsp. of cayenne powder

- 1/2 tsp. of chilli powder (optional - for those that like it hot)

- 1 tbsp. of paprika

- 1/4 tsp. of Himalayan pink salt

First strip the corn from the cobs, grind the flax seeds into a fine powder and crush the raw cacao nibs. Next, press the garlic and chop the spring onions. Add all of the ingredients into your blender and blitz until a smooth, yet sticky dough forms. Finally, divide the mixture into six equal portions and fashion into round taco shapes. Place your tacos into a dehydrator for approximately 4 hours and then turn and dehydrate for a further 2 hours before serving with your preferred filling.
