Prepared with full-bodied, organic carob powder that’s packed with vitamins (A, B1, B2, B3 and D), minerals (calcium, magnesium, iron, phosphorus, manganese and potassium), antioxidants, fibre and protein and combined with ravishing raw cacao for a match made in heaven, this moreish carob and vanilla fudge recipe also contains a generous amount of fragrant coconut oil and ‘smooth as velvet’ almond butter for a sweet and decidedly decadent fudge.
- 1/2 a cup of raw, organic carob powder
- 1/4 of a cup of organic coconut oil
- 3 tbsp. of organic almond butter
- 2 tbsp. of coconut nectar
- 2 level tsps. of organic vanilla bean powder
Our tempting carob and vanilla fudge recipe is not only utterly irresistible; it’s also an absolute breeze to prepare!
First line a small cake tin with cling film and place to one side. Next, pop the carob powder, vanilla bean powder, coconut oil, almond butter into a pan and melt gently over a low heat, taking care to constantly stir. Once all of the ingredients are thoroughly melted, stir in the coconut nectar.
Finally, pour your fudge mixture carefully into the pre-lined bread tin, before placing in the fridge to chill. Leave for a minimum of 3 hours prior to serving as the perfect snack between meals (especially for those watching their waistline) or an ideal sweet treat for hungry kids!
