Organic carob powder is a natural superfood sweetener made from the beans of the carob shrub (Ceratonia siliqua) that thrives in Mediterranean regions and in southern parts of the United States. Carob shrubs are extremely hardy and can continue producing their carob pods, which contain the carob beans and are used to make the locust gum that is often added to baby formula, for up to 100 years.
1/4 cup of organic carob powder
1 tbsp. of organic cacao powder
1 tsp. of organic vanilla bean powder
1 tbsp. of coconut nectar
1/3 cup of desiccated coconut
1 tbsp. of sunflower seeds
2 tbsp. of roughly chopped cashew nuts
1/3 cup of oats
Preparing your carob clusters couldn’t be any easier. First peel the avocado and remove the stone.
Next place all of the ingredients, except for the desiccated coconut, oats, sunflower seeds and cashew nuts into your blender and process into a lovely smooth paste.
Now stir in the desiccated coconut, oats, sunflower seeds and cashew nuts into the mixture. Spoon the end mixture into a tray. A spoonful normally works well as a size for clusters.
Place the carob clusters into your freezer for 1-2 hours (or until nice and crunchy) and try and see how long you can keep your hands off ‘em!
