Serves four as a starter, two as a main course with extra things to spread it on. Keeps for four days when refrigerated in a sealed container.
200g or 4 medium carrots
1 fresh tomato
1 teaspoon green olive tapenade
Soak the almonds in water for at least an hour to overnight. Drain, rinse in clean water. Discard the water.
Thickly slice the carrots and halve the onion. Put all non-garnish ingredients in your VitaMix or high speed blender and blend until very smooth. Use your tamper to keep the food from the sides and for an even texture. The pâté should be very smooth but not baby food texture, so stop and start a few times if you’re not sure what stage it’s at.
Turn the pâté out into a dish or use a serving ring like I did for this picture. (OK, I also put some slices of avocado in there first, to show you how nice you can make it look, but it’s not necessary!)
Slice and place the garnish however you prefer and plate it all up to serve.
Tip: If you don’t have a high-speed blender you can do this in a food processor or wand blender, but the results won’t be quite as smooth.
Dipping some Superfood Crackers into this is simply delicious.
