Not to worry – you can still get your day off to a great start with these crunchy coconut and banana breakfast bars that not only taste utterly irresistible; they’re also perfect for on the go! Packed with potassium rich bananas and succulently sweet dates, our crunchy coconut and banana breakfast bars are brimming with wholesome ingredients including sprouted buckwheat, desiccated coconut and fragrant coconut oil.
As coconut oil contains no trans fats, carbs, sugars or salts, these tasty breakfast bars make a particularly healthy snack that can also be enjoyed at any other time of day.
- 1 and a half cups of raw buckwheat grain
- 1 and a half cups desiccated coconut
- 1 tbsp. of coconut oil
- 1 ripe banana
- 8 dried dates
- 1 teaspoon of raw honey
- Small handful of raisins
- 2 cups of water
This recipe is relatively straightforward to prepare, but does require some forward planning.
First, soak the buckwheat in water for around 20 minutes. Rinse thoroughly, drain and place in a bowl and leave in your fridge overnight. At the same time, pop your dates in a separate bowl of water and leave these too, to soften overnight. The following morning place the dates into a blender. Blitz until smooth and then add in the ripe banana. Place the buckwheat into a bowl and mix in both the desiccated coconut and the coconut oil. Stir in the date mixture before returning everything to the blender once more and blending into a stiff paste. With this mixture, pop in the raisins and gently mix in with a spoon. Finally, press this mixture into a suitable tray and pop into the refrigerator to set.
