Organic coconut sugar is a delicious natural superfood sweetener made from coconut blossom nectar that’s positively brimming with beneficial nutrients including vitamins (in particular B vitamins) and minerals such as magnesium, iron, zinc and potassium. It boasts an irresistibly sweet butterscotch flavour and, as it scores just 35 on the Glycaemic Index, organic coconut sugar makes a superb sugar substitute for diabetics.
Organic coconut sugar can be used in exactly the same way as table sugar (only it tastes much better!) and is absolutely perfect in hot and cold drinks, sprinkled liberally over breakfast cereals or used as an ingredient in all of your favourite raw chocolate, cakes and desserts including our cool as a coconut banana ice lollies below.
- 2 ripe bananas
- 50 grams of raw chocolate
- 2 tbsp. of desiccated coconut
- 1 tsp. of organic coconut sugar
- A splash of organic orange juice
- 6 wooden skewers
Our temptingly tropical, cool as a coconut banana ice lollies won’t have you working up a sweat in the kitchen either – first melt the raw chocolate (we find plain works well) on a low heat and stir in the organic coconut sugar. Next cut both of the bananas into three equal pieces and insert a skewer into the bottom of each. Moisten the banana pieces with orange juice and then cover generously with the melted chocolate mixture. Finally coat with desiccated coconut and for an extra texture, try chopping up and adding some of your favourite nuts. Freeze for at least one hour (or longer, if you are able to resist) before serving. Yum!
