Ingredients
For the cookies
Half a cup of raw oats
Half a cup of organic almonds
3 tablespoons of desiccated coconut
3 tablespoons of shelled hemp seeds
3 tablespoons of cacao butter
2 tablespoons of coconut nectar
2 tablespoons of coconut sugar
For the goji berry jam
6 tablespoons of organic goji berries
5 tablespoons of orange juice
5 fresh frozen strawberries
3 tablespoons of coconut nectar
Preparation
For the cookies
Firstly melt your cacao butter over a low heat.
Put in raw oats and almonds into your blender and blend until they are finely ground. When you have this texture, add in your melted cacao butter along with the rest of your ingredients and blend everything together until it is mixed together and holds together.
Put your cookies into a non stick pan flatten it out. Now cut out the shape of the cookie you would like. Put into the freezer for 30 mins to 1 hour to help your cookies set.
For the goji berry jam
Put your goji berries into a bowl and pour in your orange juice and let them soak together for at least 2 hours.
After 2 hours put these into a blender along with the other ingredients till it is smooth. Put into the fridge for 1 hour to help it set
Assembling
When your cookies and goji berry jam are set, assemble by spooning some goji berry jam over the cookies and put a few more goji berries over the jam to finish.
