Ditch shop bought salad dressings, loaded with sugar, artificial preservatives and other nasty additives, in favour of this healthy goji berry dressing that’s also incredibly easy to prepare!
With goji berries, this is a dressing like no other(!) and is delicious drizzled generously over any of your favourite salads!
Goji Berry Dressing Ingredients
- 1/4 cup of organic goji berries (pre-soaked for 30 min)
- 2 tbsp. of freshly squeezed lemon juice
- 1 tsp. of raw honey
- 1/4 cup of extra virgin olive oil
Goji Berry Dressing Preparation
Firstly pre-soak your goji berries overnight.
Put your pre-soaked goji berries into a blender and add to it the lemon juice, olive oil and honey.
Blend everything together to a beautiful vibrant dressing!
Prep your salad. A very simple bed of greens with avocado and a little bit of crunch with your favourite nuts goes very well with this dressing.
Liberally drizzle over dressing into the salad and complete the dish by sprinkling over some more goji berries.
