Green coffee bean extract is a powerful superfood made from unroasted coffee beans, which is rich in beneficial nutrients including both chlorogenic and caffeic acid, vegetable antioxidants and polyphenols. It is frequently used as an ingredient in enemas (as an alternative to standard coffee) and is extremely kind to both skin and hair.
As the coffee beans used to make green coffee bean extract have not been roasted, it therefore contains no cafestol - a diterpene that is commonly associated with the unhealthy effects of regular coffee. In addition, green coffee bean extract tastes quite different to normal coffee, boasting a slightly bitter, more pungent flavour that is ideally suited to smoothies, shakes and juices. - 3 frozen bananas
- 1 frozen mango
- 1/4 tsp. of green coffee bean extract powder (a little goes a long way!)
- 2 tbsp. of white almond butter
- A generous tablespoon of coconut nectar
- Handful of cacao nibs
We like to keep things simple – which, is perhaps one of the reasons why we love this easy-to-prepare gorgeous green coffee bean ice-cream so much… well that and because it’s incredibly yummy too!
First cut the frozen fruit into manageable sized chunks and then place all of the ingredients into your blender. Process until it forms a lovely, thick mass and then as a choice put in some cacao nibs and stir it in. And there you have it! - Distribute into freezer proof glasses or bowls and freeze for between one and two hours before serving.
