Maca is a root vegetable native to the South American country of Peru, where it thrives at remarkably high altitudes and can survive extreme temperatures. The most valuable part of the maca is the root, which resembles a small turnip and is dried and ground to produce organic maca powder – a superfood extract that’s utterly brimming with beneficial nutrients such as vitamins (B1, B2, C & E), minerals and trace elements (including calcium, potassium, magnesium, sodium, zinc, copper, selenium, manganese, tin, iodine, phosphorus, sulphur, silicon and bismuth), enzymes and every essential amino acid. This tempting rawfood recipe contains a wealth of organic superfoods, makes approximately 4 delicious bars and is also suitable for those following a vegetarian, vegan or rawfood diet.
Ingredients:
- 1 tsp. of organic maca powder
- 2 tbsp. of organic goji berries
- 1 tbsp. of organic cashew nuts
- 1 tbsp. of organic cacao powder
- 2 tbsp. of coconut oil
- 1/2 tsp. of organic vanilla bean powder
Preparation
Gently melt the coconut oil.
Place all the ingredients into your blender except the cashew nuts and 1 tablespoon of goji berries. Now blend into a stiff, dough-like consistency.
Now put into the mix the cashew nuts and the remaining goji berries. Using the pulsing action on the blender, pulse until they become incorporated in the mix and only partly broken up. This is to give a extra dimension and texture to the bars.
Remove the mix from the blender and shape into 4 bars and cover with cling film.
Put into the fridge for approx 1 hour until they are set.
