Mango and Coconut Ice Cream

½ cup of Dessicated Coconut

½ cup of Almond Milk

250g of Mango (frozen)

Handful of Dried Mango

1 Tablespoon of Raw Honey


Firstly cut up your fresh mango into cubes or manageable sizes for a blender and put these into a freezer until they are frozen.

Soak the dried mango in the almond milk for at least 1 hour. (Keep the almond milk also after the soaking).

Now with the frozen fresh mango and soaked dried mango, place these into the blender. Put the rest of your ingredients in – the dessicated coconut, raw honey, and the almond milk that you used to soak your dried mango in.

Carefully pulse together, to leave some delicious chunks of dried mango for texture.

Pour into a suitable container and freeze until set.
