Cashew nuts are a mineral rich superfood that grows on the cashew tree, an evergreen that can grow as tall as 14 metres and, although native to Brazil, is widely cultivated in many other tropical countries. Organic cashew nuts are hand peeled and, unlike the more readily available roasted version, are never subjected to any form of heating. This means that they are able to retain an optimal number of beneficial nutrients, including vegetable protein, minerals (such as potassium, calcium, sodium, magnesium, iron, copper, zinc and phosphorus), every essential amino acid and omega-3 fatty acids.
Organic cashew nuts are delightfully crunchy and boast a wonderful, creamy flavour that can be enjoyed straight from the bag or combined with other nuts and dried fruits in a tasty trail mix. An ideal superfood ingredient in raw chocolate, cakes and biscuits, they also make a delicious addition to green salads and taste great in a wide range of savoury dishes, such as our sublime rawfood version of ricotta cheese below.
Raw Cashew Nut Cheese
Don’t forget that ‘life is great, but cheese makes it better.’ And this irresistible raw cashew nut cheese recipe is not only suitable for those following a rawfood diet; it’s also perfect for vegetarians and vegans!
2 cups of organic cashew nuts
1/4 cup of (spring) water
1/4 cup of freshly squeezed lemon juice
1/2 a cup of nutritional yeast
4 cloves of crushed garlic
1 tsp. of Himalayan pink salt
Dash of pepper
First soak the organic cashew nuts in water for between three to four hours. Next place the organic cashew nuts, half of the water, half of the lemon juice, garlic and Himalayan pink salt and pepper into your blender. Blitz until it forms a nice consistency and then steadily add more lemon juice and water until it forms a ricotta-like texture that you’re happy with.
