Who doesn’t like doughnuts? Doughnuts are arguably one of our best-loved comfort foods and a firm British favourite, albeit one that tends to get a bad press. That’s because shop-bought doughnuts are generally fried, packed with refined sugars and flour, contain a large amount of trans fat and include an average of 200 to 300 calories. Yet happily not all doughnuts are created equal! Indeed, our delicious raw chia and coconut doughnuts are totally free from processed ingredients and are instead prepared using a wholesome selection of nutrient-dense nuts and seeds, such as organic cashew nuts and organic chia seeds.
Organic chia seeds come from the Chia (Salvia Hispanica) - a Mexican mint plant that belongs to the labiates family and is native to central and Southern Mexico and Guatemala. A valuable source of food and medicine for the Mayans, Aztecs and Tehuantepecs of South America for centuries, organic chia seeds are positively brimming with beneficial nutrients, including vitamin A, minerals (calcium, potassium, magnesium, zinc, phosphorus, manganese and sodium), protein, fibre and omega-3 fatty acids.
Raw chia and coconut doughnuts
Now you really can have your cake and eat it - these irresistible chia seed doughnuts boast a tempting coconut frosting.
For the doughnuts
- 100 grams of finely ground organic cashew nuts
- 50 grams of finely ground linseeds
- 3 tbsp. of organic chia seeds
- 1/2 a cup of (spring) water
- 2 tbsp. of lemon zest
- 2 tbsp. of grated apple (remove juice)
For the frosting (optional)
- 1 cup of desiccated coconut (or fresh coconut pulp if available)
- 2 tbsp. of coconut oil (melted)
- 2 tbsp. coconut sugar
First mix the ground linseeds with water and leave to thicken for 2 minutes. Next pop the ground cashew nuts, organic chia seeds, organic dried dates, lemon zest and grated apple into a blender and thoroughly blend. Pour in the linseed mixture and process into a sticky dough. Now divide the dough into pieces and roll into balls. Flatten slightly and create a hole in the middle of each doughnut before placing into your fridge to set for about 30 minutes prior to frosting.
To create the coconut frosting, blend the desiccated coconut with 1/2 a cup of water. Gently melt the coconut oil and then place this into your blender, together with the desiccated coconut mix and coconut nectar. Blitz until soft and creamy. Now pop the frosting into your fridge for 15 minutes to stiffen.
Finally, remove the doughnuts from the fridge and top generously with the coconut frosting. We completed these delicious doughnuts by sprinkling over some walnuts, but the choice is fors for sprinkles! Your favourite dried fruits, chopped nuts, cacao nibs, it is endless!
