Organic chia seeds have been a favourite with the Aztecs and Indians of South America for centuries. The tiny seeds, which are extracted from a species of Mexican mint plant known as the chia, contain a vast array of valuable nutrients including vitamins (vitamin A), minerals (such as calcium, potassium, magnesium, zinc, phosphorus, manganese and sodium) protein, fibre and omega-3 fatty acids, and rank extremely low on the low glycaemic index, making them a suitable superfood for diabetics.
Raw chia seed and onion bread recipe below is an ideal accompaniment to all of your favourite raw soups and salads and makes a wholesome alternative to highly processed shop bought breads.
- 3 onions
- 2 tsp. of organic chia seeds
- 1 cup of organic sunflower seeds
- 1 cup of organic flax seeds
- 1/3 cup of olive oil
- 3 1/2 tbsp. of coconut aminos
First pop both the organic sunflower seeds and flax seeds into your blender and process into a fine meal. Remove from your blender and set to one side. Next, peel the onions, cut into manageable size chunks and place into your food processor. Process into small pieces taking care to ensure that they don’t become too soft. Now place the onions into a large mixing bowl and add in all of the other ingredients, including the ground sunflower and flax seeds. Mix thoroughly, adding a splash of water if required to prevent from becoming too dry.
Next line three dehydrator trays with non-stick dehydrator sheets and spread your raw bread mixture evenly onto them. Dehydrate for approximately 1 hour at 118 degrees, before reducing to 105 degrees and drying for a further 6 hours. As soon as the bread starts holding together, score into the desired portion sizes using a knife.
