Ingredients for the Chocolate and Coconut Ganache topping
80g Raw Cacao Powder
50g Raw Cacao Butter
50g Coconut Sugar
50g Coconut Nectar
2 ripe Avocados
1 teaspoon Vanilla Bean Powder
Ingredients for the “biscuit” base
100g Organic Almonds
Preparation
For the Chocolate and Coconut Ganache topping -
Gather all your required ingredients and put them in a food processor together.
Process everything together until it reaches a smooth velvety consistency.
For the “biscuit” base
Gather all your required ingredients and put them in a food processor together.
Process everything together until it reaches a crumbly form but when compacted can hold and form together. Put the mix in a desired tray shape (we used a circular one) and press the mix into the tray to form a flat “biscuity” base. Put in the freezer for around 30 minutes just to let it further set properly.
Assembling
When the base is set, pour the ganache over the base and there you have it!
Depending on preference, you may choose to keep the ganache as it is, soft and smooth, or put the whole completed treat in the freezer for another 30 minutes to let it set and a little more stiffer.
Why not try putting your own twist on this treat by topping with your favourite fresh fruit or nuts.
