For the brownies
- 150g of organic walnuts
- 35g of raw cacao powder
- 35g of raw cacao nibs
- 25g of raw cacao butter
- 25g of organic dates
For the frosting
- 60g of raw cacao butter
- 25g of raw cacao powder
- 30g of raw almond butter
To make the brownies
Gently begin to melt the cacao butter using the lowest heat setting on your hob. Once the cacao butter has started melting, remove from the heat and allow it to finish naturally. Next, place the melted cacao butter and all of the remaining brownie ingredients into your food processer and mix (using a few drops of water if necessary) until a dough-like mixture forms.
Now roll out the brownie dough until it’s about 5mm thick and cut using your favourite biscuit moulds. Arrange these on a baking tray (lined with greaseproof paper) and pop them into the freezer.
To make the frosting
First melt the cacao butter using the same method as above. Once the cacao butter is completely melted, add the remaining frosting ingredients and whisk until you have a rich, smooth chocolate icing. Remove the brownies from the freezer, drizzle generously with the chocolate frosting and place back into the freezer.
Or put your own topping of your choice!
Try the classic chocolate and strawberry combination, by serving with a fruity strawberry sauce. Or sprinkle over some raw chocolate, nuts, and berries or extra bite and deliciousness! The choices are endless!
