Pulp from 5 coconuts
Water from 3 coconuts
½ cup of cashew nuts
½ cup of coconut nectar
1 medium ripe avocado
3 tablespoons of chopped fresh mint
2 tablespoons of coconut oil
2-4 tablespoons of raw cacao nibs
2 drops of peppermint essential oil
Blend the coconut pulp and water in a Vita-Mix or other high-powered blender. Strain through a fine mesh strainer or a nut milk bag.
Pour the coconut blend back into the blender and add the rest of the ingredients except the cacao and peppermint oil.
Blend on high until creamy.
Stir in the cacao and oil by hand.
For best results chill in the freezer for several hours, then pour into an ice cream maker and follow the ice cream maker’s directions. If you don’t have an ice cream maker, stir the mixture every hour and return to the freezer until solid.
