Olive demonstrates below a delicious way to still be able to enjoy pasta dishes, but without pasta! Served with a lip smacking and naturally tasty pesto, it is ideal for those on a gluten free diet!
This alternative to pasta also truly works perfectly with all your favourite traditional pasta sauces! Give this healthy alternative a try! It makes a decidedly satisfying dinner or lunch!

- 1 cup of fresh basil leaves
- 1/4 cup of olive oil
- 1-2 cloves of garlic
- 1/2 a teaspoon of Himalayan pink salt
- 2 tablespoons of organic shelled hemp seeds
- 2 tablespoons of pine nuts, plus more for topping
- 1 courgette
To make your courgette pasta, take a courgette and peel until your reach the seeds. 1 serving is about half a courgette.
To make the pesto put the basil, olive oil, garlic, Himalayan pink salt, shelled hemp seeds, pine nuts into a food processor and blitz. 1 tablespoon of the pesto is around 1 serving.
Assemble by putting the pesto over the courgette pasta or carefully toss them together. Complete the dish by drizzling over some olive oil and tossing over some pine nuts.
Feel free to experiment and be creative also! Try peeling other vegetables also such as carrots and radishes for some vibrant colours! Or add another depth of flavour by adding juicy tomatoes or olives. Or try it by adding some of your favourite chopped nuts. The choice is yours!
And even if you are not on a gluten free or raw food diet, try substituting the normal pasta for courgette pasta, the results and flavours are fantastic!

Fssc1 | 9/15/13I have just made this pasta for the first time and really enjoyed it. I was a bit sceptical about trying raw pasta but the pesto was lovely and creamy and I'd definitely make it again.
