Organic cranberries are small, red berries that grow on a species of evergreen dwarf shrubs and trailing vines in North America, where the native Indians have cultivated them for centuries and believe them to possess wound healing properties. Sometimes known as “moss berries" or "bearberries" (as they are a particular favourite with wild bears), organic cranberries are dried at extremely low temperatures in order to preserve an optimum number of their naturally occurring nutrients, including vitamins (vitamins C, E and K), minerals (calcium, iron, magnesium, phosphorous, potassium, sodium and zinc), phenolic acid, flavonoids, anthocyanins and proanthocyanidins.
Organic cranberries are an exceptionally sweet and versatile fruit that frequently features on Christmas menus, yet can also be enjoyed at any other time of year. Try mixing organic cranberries into your preferred smoothies, shakes and juices for example, or use as an additional ingredient in a tempting range of raw snacks, chocolate and desserts, such as our utterly irresistible raw pie recipe below.
For the pie base
1 ½ cups of organic cashew nuts
½ a cup of organic macadamia nuts
¾ a cup of organic dried dates
For the cranberry and raspberry filling
1 cup of organic dried cranberries
1 cup of frozen raspberries
1 cup of chopped apple
½ a cup of coconut nectar
2 tablespoons of coconut oil
To prepare the pie base, firstly soak your cashew nuts and macadamia nuts (separately) for at least 3 hours. After they have been soaked, place them all in a blender along with the dates and using the pulse action gently blend until a sticky dough texture. Firmly press this into the mould of a suitable pie dish to form the base of the pie and place into the freezer to set.
To prepare the filling, firstly gently melt the coconut oil. Then simply put all the ingredients into a blender and carefully blend until everything is incorporated together. Be careful not to blend it too much into a liquid, you make some thickness to it.
Now, carefully spoon in this mixture into the now set pie crust (put in as much or as little as you please!) and put back into the freezer for a further 2 to 3 hours until the filling is set.
