Organic goji berries (aka wolfberries) are the fruit of the Lycium barbarum, a shrub that belongs to the nightshade family and is native to the Himalayan region of China. This bright red superfruit boasts a low glycaemic index rating of only 29 and is loaded with valuable nutrients, including vitamins B1, B2, B6, C & E (indeed, organic goji berries are one of the richest sources of vitamin C on the planet), zinc, iron, copper, calcium, germanium, selenium and phosphorus, carotenoids, polysaccharides and beta-sisterol.
Organic goji berries posses an intense flavour that many liken to a cross between cranberry and cherry. This makes them a particularly popular ingredient in a variety of rawfood snacks, such as raw chocolate, trail mix and desserts. Organic goji berries can also be used to prepare a rejuvenating tea and add an interesting and colourful twist to all manner of savoury dishes.
Ingredients
For the raw curry sauce
- 3 tbsp. of organic coconut oil
- 1 cup of coconut milk
- 1 handful of fresh coriander
- 1 tbsp. of cumin powder
- 1 small fresh chilli pepper
- 2 tbsp. of fresh lemongrass
- 2 tbsp. of fresh ginger
- 6 tbsp. of lime juice
Other ingredients -
- 1/4 of a cup of organic goji berries
- 1 pack of kelp noodles
- 1/4 of a cup of yellow pepper thinly sliced
- 1/4 of a cup of carrots thinly sliced
- 1/4 of a cup of cabbage thinly sliced
- Handful of chopped almonds
Preparation
First gently melt the organic coconut oil and place, along with the necessary sauce ingredients, into your blender and blitz until thick and creamy.
Next prepare your vegetables (of course feel free to add vegetables of your own choice) and prepare the kelp noodles according to the instructions on the packaging.
Now stir the vegetables, organic goji berries, chopped almonds and the curry sauce into the kelp noodles. Lastly top with fresh coriander before serving. Delicious!
