2 to 3 fresh basil leaves
1 cup cashew nuts
1 clove garlic
Handful of chopped chives
Dash of Himalayan pink salt
1 Tablespoon nutritional yeast
2 Tablespoon water
To prepare the ‘cheese’ soak your cashew nuts overnight. With your soaked cashew nuts place them into a blender. Put into the blender along with them the ingredients of garlic, nutritional yeast, water and Himalayan pink salt. Blend all of these together using the pulsing action until everything comes together. Put into a bowl and add to it the chives and stir all of it together.
Take the courgette and carefully slice it thinly length ways.
Start assembling the lasagne by putting two courgette slices onto a desired serving dish. Spoon over some of the ‘cheese’ onto the courgette slices.
Now slice your tomatoes and place 5 to 6 slices on top of the ‘cheese’. Chop up your basil leaves and sprinkle a small handful over the tomatoes.
Place this 2 more slices of courgette over this, and now you can repeat the assembling process. We opted for 3 layers.
As a option complete the dish by sprinkling over some cracked pepper.
