Organic pumpkin seeds are a particularly nutritious superfood that’s brimming with beneficial nutrients including protein, fibre, vitamins (such as B6, B9, C, E & K), minerals (iron, zinc, manganese, magnesium, phosphorous, copper and potassium for example) and plant based omega-3 fatty acids. In fact, these small, flat, green seeds, which boast a slightly sweet and faintly nutty flavour, are actively recommended as a valuable source of zinc by the World Health Organisation.
Organic pumpkin seeds can be enjoyed straight from the bag for an especially wholesome snack at any time of day, or sprinkled liberally over breakfast cereals, salads and trail mix. - 1 cup of organic pumpkin seeds
- 1 tsp. of coconut vinegar
- 1 tsp. of Himalayan pink salt
- 2 cloves of garlic
- 1 cup of basil leaves
- 1/2 cup of olive oil
First soak the organic pumpkin seeds in a bowl of water for up to two hours. Next drain the organic pumpkin seeds and place them into your blender. Add in all of the remaining ingredients and then blitz until it forms a lovely, smooth pesto.
