200g or 2 cups cashew nuts
100g or 1 cup golden flax seeds
100g or 1 cup shelled hemp seeds
3 medium tomatoes
1/2 cup sesame seeds
1 cup water
Soak the cashew nuts in water for at least an hour to overnight. Drain, rinse in clean water. Discard the water.
Put all the ingredients into your VitaMix or other high-speed blender. Blend on high until you’ve made a smooth batter.
Line three dehydrator trays with non-stick sheets.
Pour the batter in equal amounts onto each sheet. Spread the batter evenly using a spatula.
Place the trays in your dehydrator. Dehydrate at 115°F/46°C for six hours, then remove the trays from the dehydrator.
Put a spare dehydrator tray with its normal mesh lining on top of one of the cracker trays, so the crackers are sandwiched tightly between the trays. Turn it upside down, so the cracker tops are now at the bottom. Peel the non-stick sheet from the crackers. Using a blunt knife, score the crackers into the size and shape you want them to be. Repeat with all the cracker trays. Place back in the dehydrator for another six hours or until crisp.
